I love snickerdoodles and I love ice cream. So I thought – what’s a healthy way to combine them? Snickerdoodle protein fluff ice cream! The  biggest hurdle for me with counting macros and eating healthy is my sweet tooth, so for me to succeed with my weight loss goals, I need to find (or create) healthy snacks that are tasty, filling, and satisfy my cravings.

Protein fluff, if you haven’t heard of it yet, is a high protein, low calorie, and VERY filling snack. It makes a high volume of what tastes like dessert, but is full of protein and healthy for you. It can be customized with fruit, chocolate, sprinkles, and any other topping you want.

I put on my mad scientist chef’s hat and came up with a recipe that tastes pretty close to my beloved snickerdoodles. This recipe is easier to make if you have a stand mixer, but still doable with a hand mixer. (Think of it as a great arm workout.)

The best part about protein fluff is just how easy it is to make. You just assemble your ingredients (I’ve linked the ones I use in the list)…

Blend on high for 10 minutes. Extra easy if you have a Kitchenaid Mixer. (They are worth the splurge. Trust me.)

And freeze for 45-60 minutes for just the right consistency, add your toppings, and voilà! Healthy snickerdoodle protein fluff.

Snickerdoodle Protein Fluff Ice Cream

Ingredients

  • 1 scoop vanilla casein protein powder
    • Note: you don’t have to use casein protein. Normal protein can be substituted – just use two scoops instead of one. Casein is just easier to fluff.
    • My favorite “normal” protein: Optimum Nutrition Vanilla Ice Cream
  • 1/4 tsp xanthan gum
  • 1 Tbsp PB powder
  • 1 cup unsweetened almond milk
  • Dash of cinnamon (1/8 – 1/4 tsp, to taste)
  • 1/2 tsp cookie or vanilla emulsion (optional)
    • Emulsions are intensified flavors that enhance your snacks when added in small increments. They last forever and they are great to use for baking &c.
  • Sugar Free, Low Carb, Keto Friendly Caramel Syrup to drizzle on top: ChocZero

Takes prep, can serve up to 2.

Instructions

  1. Combine ingredients in large bowl.
  2. Blend on high for 7-10 minutes.
  3. Cover and place in freezer for 45-60 minutes.
  4. Sprinkle on a tad more cinnamon and other toppings as desired and enjoy.
