Today is National Ice Cream Day, so I wanted to share a fast easy keto vanilla ice cream recipe that I make for King Bacon (Mr. Hubs) and myself! We can’t tell the difference between this ice cream and full sugar ice cream and highly recommend it.

Equipment
You do need an ice cream maker for these. I do recommend owning one if you practice the keto diet or are low carb or sugar free. They really aren’t that expensive for a basic model and even though I don’t like owning one purpose kitchen devices, I have not once regretted buying ours. We love it and with the amount we use the ice cream maker it has more than paid for itself versus buying ice cream at the store or from an ice cream parlor. If you are an ice cream lover or aficionado they are great to have – plus it is far healthier to make your own ice cream than buy it in the store!
I use the following model – VERY inexpensive: Cuisinart ICE 21 1.5 Quart Ice Cream Maker

Easy Keto Vanilla Ice Cream
Equipment
- Ice Cream Maker
Ingredients
- 1.5 cups heavy whipping cream
- .5 cups Califia Almond/Coconut Milk or other milk of choice
- .5 cups confectioners / powdered sweetener
- 1.5 tsp vanilla extract
- 2 squeezes Vanilla stevia sweetener Optional
- 2-3 grinds salt of choice
Instructions
- Mix all ingredients in separate bowl.
- Set up ice cream maker per directions.
- Pour ingredients into ice cream maker.
- Churn as long as the ice cream maker recommends; ours is about 20 minutes.
- Distribute into bowls.
- Freeze for 10-20 minutes if the ice cream begins melting very quickly.

Ingredients we use:
- Powdered / confectioners sweetener (either work)
- Vanilla Extract
- Vanilla Stevia Sweetener
- Salt
- Califia Almond / Coconut Milk Blend
- NOTE: I do NOT recommend buying this product online. Definitely find it at your local grocery store! The price is FAR better! This link is simply to give an idea of what we personally use at home for this recipe. You cannot taste the coconut milk at all when it’s in this recipe.
